Oatmeal Cookies

Ingredients:

1 Cup Unsalted Butter, Softened

1 Cup White Sugar

1 Cup Packed Brown Sugar

2 Eggs

1 Tsp Vanilla Extract

2 Cups Flour

1 Tsp. Baking Soda

1 Tsp. Salt

1 1/2 Tsp Cinnamon

3 Cups Quick Cooking Oats

1/2 Cup Dried Cranberries (optional)

1/2 Cup Chocolate Chips (optional)

Directions:

  1. Cream together butter and both sugars. Beat in eggs one at a time, add vanilla.

  2. Combine flour, baking soda, salt and cinnamon in a separate bowl.

  3. Slowly add dry mixture into wet mixture.

  4. Mix in oats, dried cranberries and chocolate chips.

  5. Cover and chill dough for one hour.

  6. Preheat oven to 375.

  7. Grease cookie sheet, roll dough into walnut sized balls and place 2 inches apart on cookie sheet.

  8. Flatten each cookie with a large fork dipped in sugar.

  9. Bake for 8-10 min. in preheated oven.

  10. Remove from oven, sprinkle a little kosher salt on top of each cookie. Allow cookies to cool on cooling rack for 5 minutes.
