Lemon Poppyseed Bread

Ingredients:

1 stick unsalted butter melted

1 cup white sugar

3 Eggs

1/2 cup Greek yogurt (or sour cream)

2 tbsp lemon zest

1 1/2 cups flour

1/2 tsp baking powder

1 tsp kosher salt

3/4 cup lemon curd

Topping:

1 cup rolled oats

4 tbsp melted butter

1/4 cup sugar

1/4 cup flour

1tbsp lemon zest

1/2 tsp kosher salt

Directions:

  1. Beat together melted butter and sugar.

  2. Add in eggs one at a time, then mix in Greek yogurt and lemon zest.

  3. Mix in flour, baking powder, salt and mix thoroughly. Batter will be thick.

  4. Pour batter into greased square baking pan.

  5. Place dollops of lemon curd on top of batter, swirl into batter with a knife.

  6. Place topping mix on top of batter and spread evenly.

  7. Bake at 350 degrees for 45 min.
