Banana Chocolate Chip Muffins

INGREDIENTS:

3 Ripe Bananas

1 Egg (I have done without the banana and it works fine too)

1 Tsp. Vanilla

1 Stick Unsalted Butter Melted

1/2 Cup Brown Sugar

1 1/2 Cups Flour

1 Tsp. Cinnamon

1 Tsp. Baking Soda

1 Tsp. Baking Powder

1/2 Tsp. Salt

1/2 Cup Chocolate Chips

Crumb Topping:

2 Tbsp. Melted Butter

2 Tbsp. Flour

2 Tbsp. Brown Sugar

2 Tbsp. Rolled Oats

1/4 Tsp Kosher Salt

1/4 Tsp Cinnamon

DIRECTIONS:

  1. Preheat oven to 375.

  2. Mash banana with fork or in a mixer until smooth. Add in melted butter, Vanilla, Egg and brown sugar. Mix thoroughly until smooth.

  3. Combine Dry Ingredients in a separate bowl; Flour, Cinnamon, Baking Soda, Baking Powder and Salt.

  4. Slowly Add Dry mixture to your Banana Mixture with your mixer. Fold in chocolate chips.

  5. Use an ice cream scooper to distribute even scoops into each muffin tin.

  6. Prepare your Crumble Topping; Mix all ingredients in a bowl (Melted Butter, Flour, Brown Sugar, Rolled Oats, Kosher Salt & Cinnamon).

  7. Distribute a small spoonful of topping onto the tops of each muffin tin.

  8. Bake for 18-20 min.
