World’s Best Bolognese

I made this recipe during the Corona Virus lockdown using only ingredients I had in my fridge. It turned out life changing and I will forever keep it the same.

Ingredients:

1lb Italian Sausage

1 red onion chopped

1 cup chopped, peeled baby carrots

4 cloves garlic sliced thinly

1 can tomato sauce

1 can diced tomatoes

Fresh Thyme

Fresh Oregano

1 Cinnamon Stick

kosher salt

Directions:

  1. Caramelize Onions, carrots and garlic in olive oil over medium high heat. Season with salt.

  2. Once cooked through, add sausage and cook completely.

  3. Add both cans of tomato sauce and diced tomatoes. Add in full sprigs of oregano and thyme, add in cinnamon stick. Season with kosher salt.

  4. Turn heat to low to simmer. Cover and cook for 3-4 hours. The longer you cook this, the better!

  5. Pair with your favorite pasta, we love to use it with raviolis or Rigatoni.
