Ingredients:
2 lbs. Bone In Short Ribs
Kosher salt
Black Pepper
1 Tbsp. Olive Oil
1 Jalapeno
1/3 Cup Orange Juice
1 1/2 Cups Beef Stock
2/3 Cup Red Wine
2 Cinnamon Sticks
Fresh Thyme (5-6 Sprigs)
Fresh Parsley (Half Bundle)
Directions:
Preheat Oven to 350
Heavily coat the short ribs in salt and pepper
Heat Dutch Oven over high heat with olive oil, sear short ribs on all sides until browned. Remove from pot onto separate plate.
In the same pot, add chopped jalapeno, thyme and parsley. Saute 2-3 minutes.
Add red wine, reduce on medium for 3-4 minutes until the wine is reduced to half.
Add Orange Juice, Beef Stock and Cinnamon Sticks. Return Short Ribs to the dutch oven.
Cover with lid and bake for 3 1/2 hours.
Short ribs should shred easily.
